This book is handy for cooking up fast, nutritious meals on hectic weekdays. There really is something for everyone, from curries to breakfast muffins, and they all cleverly cut down on fat and calories.

What we cooked: White bean and tuna fishcakes and Raspberry and orange soufflés. Their way of making fishcakes was much easier than the traditional method. Using cannellini beans instead of potatoes was a clever way to cut down on calories and prep time, and they had a good texture and lovely lemony flavour. The soufflés were light, fruity and delicious. Both were easy yet looked impressive - ideal if you have people coming over. Best for busy cooks who want to make quick, healthy meals that don't taste like 'diet food'.
